Making Good Food – Cacao Chip Bars (no-bake)

One item we often assume is absent from a “Good Food” meal plan is a touch of sweet. Some people might think, “If I eat clean, what will I do for dessert?” We have come upon this amazing recipe for bars that are just sweet enough, just crunchy enough, to make a delightful and delicious addition to our regular food preparation regimen. And everyone we share them with agree, these bars are fantastic, filling and fulfilling.

Cacao Chip Bars (no-bake)


  • 1 cup pitted dates
  • 1-1/2 cup cashews
  • 1-1/2 cup walnuts
  • 1/2 cup hemp hearts
  • 1 cup shredded unsweetened coconut
  • 1/4 cup coconut oil
  • 3/4 tsp sea salt
  • 2 tsp vanilla
  • 1/2 cup cacao nibs


  1. Put dates, cashews, walnuts, hemp hearts and shredded coconut in food processor and process until combined
  2. Add the last 4 ingredients and process till combined
  3. Line an 8×8 pan with parchment paper
  4. Press dough into the pan and refrigerate for several hours
  5. When the dough is firm enough cut into squares and store in container in the refrigerator
